12 March 2007 New non-HVO Moisture Resistant (MR) Sugar from British Sugar for decoration that lasts
British Sugar, the leading supplier of sugar to the UK food and drink industries, has responded to market place needs for healthier products, by adding a re-formulated moisture-resistant sugar (MR Sugar) to its dry sugar range, which contains a non-hydrogenated vegetable oil (HVO).
MR Sugar has been developed specifically for bakers to enhance decorative coatings and toppings on cakes, pastries and desserts, where packaging or storage conditions require moisture resistance. With a particle size similar to caster sugar, MR Sugar will not dissolve and so enhances the appearance and can extend the finished products shelf-life. This is due to the inclusion of a coating of a newly re-formulated, non-hydrogenated fat, which doesn’t contain trans-fats*.
Ian Hollyman, Commercial Product Manager at British Sugar, said: “MR Sugar will not only outperform ordinary caster sugar, but it also has the clean taste of sugar with none of the aftertastes often associated with alternatives such as dusting powders.”
Simple to use, free-flowing and dust-free MR Sugar can be sprinkled onto the surface of warm or cold cakes and will stay there to give a freshly produced appearance that is appealing to the consumer.
Ian Hollyman concluded: “MR Sugar retains its texture and visual impact on the surface, making cake and pastry products more attractive at point of sale and when served.”
Developed by British Sugar’s Technical Team and backed by the knowledge and resources of their Food Centre, MR Sugar is another example of innovation by British Sugar.

*Trans-fats, - which are mainly found in partially hydrogenated vegetable oil, common ingredients in thousands of food products, have been negatively linked to raising blood cholesterol levels and promoting heart disease. They occur naturally in some foods but are also added to items such as bakery and dairy products as a result of processes to extend shelf life and improve texture.
